And while I’m not against waffles. I think they have their problems. The first being that they’re a pain in the butt to cook for more than two people. Unless you have twelve waffle irons, but who’s got storage for that?

My eldest daughter is eight, and I’ve been making her pancakes since she was a year old. I don’t half ass things, so I devoted myself to making the best pancakes on the planet.

Here are eight tips to take your pancake cooking to the next level.

1. Use more baking powder

Most of you don’t, and it’s a shame.

Baking powder is the key to a nice fluffy pancake, but for some reason, it’s left out of a lot of pancake recipes in favor of baking soda and buttermilk. There’s nothing wrong with baking soda. In fact, I think you should use it in your pancakes. But buttermilk is overdoing it.

The reason most recipes use buttermilk and baking soda is they have a synergistic effect. Baking soda needs a catalyst to make it puff up, and buttermilk does the work.
